Meatless Monday: "Humdillas" (FCL Sept. 16)

Hummus Quesadillas are a great meatless dish!

It's delicious fusion of Mexican and Mediterranean! This week's Meatless Monday dish is one that's easy to make and everyone will enjoy!

Ingredients:

1 Bell Pepper sliced into sticks
1/2 Red Onion sliced into sticks
1 container of fresh Mushrooms sliced
1 can of Black Beans rinsed and drained
Tortilla of choice
Hummus of Choice
Salt & Pepper

Prep includes tossing the vegetables in olive oil, salt and pepper and roasting them at 400 degrees for 15 mins then tossing and back in for another 10-15 mins.

The Avocado Crema  is something beneficial to know how to make. 

It is the perfect accessory for tacos, salads, rice bowls and pretty much anything else that has even a hint of Mexican flavor.

Plus, it is ridiculously easy to make, less than 5 ingredients and takes all of about 2 minutes in the blender or food processor.

Traditionally, avocado crema is made with Mexican crema (similar to sour cream but a more sour.) 

Here is all you need:

Dairy Free Avocado Crema

1 Ripe avocado
1/4 cup Canned Full Fat Coconut Milk
2 TBSP Extra Virgin Olive Oil
1 TBSP Apple Cider Vinegar
1 TBSP Lime Juice
1/4 TSP Sea Salt

You can place all those ingredients in a blender or even hand mix it. its that easy.

Now once you have all the veggies roasted and the sauce made its time to make your dilla!  Spread Hummus top with veggies close the tilla and grill it in the pan to desired crispness.

Top with Crema and salsa then sit by the campfire and enjoy!
