JACKSONVILLE, Fla. — Laura Zuckerburg is a single mother of three, who enjoys cooking and serving up great tasting cuisines. Her food truck, Island Girl Seafood, is one of Jacksonville’s top food trucks.
“I love to cook and I love to know that I make people feel good when they eat, so it’s as beneficial to me to know that I made somebody’s day or made them feel great by eating,” Zuckerburg said.
Zuckerburg has been in the mobile food business for more than 20 years. Her Coconut Shrimp with Creole Marmalade won Best Shrimp in St. Augustine for the seventh time this year.
Popular on the menu is her very own Coconut Haddock Sandwich with Fresh Mango Salsa.
“We get our fresh fish fillet, we put it in batter, and then we roll it in a special concoction of seasonings and spices as well as coconut and it’s coated in that and then it goes in the deep fryer,” Zuckerburg said.
The fried Brie Balls are also a fan favorite.
“We get fresh brie and form it into the shape of a ball, we dip it in batter, and then we deep fry it, and then we serve it with raspberry preserves. It’s really good and it’s just oozy and delicious,” Zuckerburg said.
The gourmet deep fried Brussels Sprouts are also worth a bite.
“We fry them, then we top them with a special seasoning, add bacon, and then we drizzle balsamic glaze on top,” Zuckerberg said.
