Pie95 food truck brings wood-fired pizza to Jacksonville streets

JACKSONVILLE, Fla. — Chef Evan Eriksen is living out his dream of working in the food and beverage industry. He developed a passion for cooking at a young age.

"The most satisfaction I get out of cooking is creating something out of nothing and sharing it with other people," Eriksen said. 

He has since worked his way up to owning his own food truck, Pie95. It’s where he cooks up wood-fired and handcrafted pizza pies to perfection. The top seller is the Carnivore, which comes with a wide range of meats and toppings.

"We have our dough, we sauce it, we cheese it, we put a variety of different meats, Salami, pepperoni, ham, sometimes bacon and put that in the oven, two minutes later, take it out, serve it to you, and hopefully you’re smiling," Eriksen said.

Evan's menu is also vegan-friendly with the Herbivore Pizza.

"It's Garnished with oregano, oven roasted garlic, basil, and all of the vegetable varieties we have on the list, topped with arugula, and some extra virgin olive oil. It’s very very popular nowadays with the whole vegan tend happening, I’m not vegan, but that’s actually my favorite pizza," Eriksen said.

Evan is also known for his wings. Traditional Buffalo, Cajun Ranch, and The Curry Lemon Pepper.

"They are all oven roasted wings so there’s no saturated fat," he said. "They are seasoned properly not overly aggressive sauced and just done with some TLC.
