Jacksonville steakhouse honored with Wine Spectator’s Award of Excellence

Ian Lynch is the executive chef who developed a passion for serving tasty cuisines at a young age.

JACKSONVILLE, Fla. — This First Coast restaurant offers an extensive list of wine with more than 300 selections from wine regions around the world.

For the second consecutive year, Cowford Chophouse was recognized in Wine Spectator’s 2019 Restaurant Awards for its outstanding wine program.

Ian Lynch is the executive chef who developed a passion for serving tasty cuisines at a young age.

"Instead of watching cartoons, I was always watching cooking shows, and some of my friends would always give me a hard time," Lynch said.  

At Lynch's first job, he worked at a sandwich shop in Southern California. You can now find him serving up some of the best-tasting dishes at Jacksonville's premier steakhouse located inside the historic Bostwick Building.

The most popular appetizer is the Duck Fat Lobster Cornbread.

"We use lobster and crab meat, we toss it with a little cream fresh, a little whole grain mustard, some red onion; we sear the duck fat cornbread and spoon over the lobster and crab mixture; add a little smoke paprika oil some fresh herbs," Lynch said.

For lunch, it’s all about the Poke Bowl, a favorite among sushi lovers. 

"We toss either the salmon or tuna in a soy sauce and sweetened rice wine," Lynch began. "A little citrus in there, toss that together, put it on the rice, and I add some edamame, pickled pineapple, some ginger, some fresh avocado, and then we make a sriracha aioli."

 If you’re in the mood for some flavor, Cowford’s steaks won’t disappoint. Each cut is cooked on an open flame over a wood-fired grill.

After we mark the steak, we finish that steak off to your desired temperature in the Bertha Oven, again using a little wood and some charcoal again infusing that smoked flavor to the steak," Lynch said. "We make our own au jus in-house which is what we finish the steak off with."
