Sauteed Local Speckled Trout with:

Pimento Cheese Creamed Spinach
1 lb Wilted Spinach, cooled, chopped, and strained.
3 c Pimento Cheese, recipe follows
½ c Half and Half
½ c Toasted Pecans
3T Roasted Red Peppers, peeled and sliced for garnish

1. Mix spinach, cheese, and half&half thoroughly and season with salt and pepper.
2. Place in serving bowl and garnish with toasted pecans and peppers.

Cheese
8 each Red Peppers, roasted, peeled and cut small dice
3 cups Cream Cheese, room temperature
1 cup Mayonnaise
1 t Light Chili Powder
½ t Cayenne
½ t Smoked Paprika
½ t Granulated Garlic
2 cups Sharp Cheddar, shredded
2 cups Smoked Gouda, shredded
Salt and Pepper to Taste

Sauteed Grouper over
Boiled Peanut Succotash
Bacon pieces, small dice
1 ea Yellow onion, small dice
2 ea Red pepper, small dice
4 stalks Celery, small dice
6 ears Corn, cleaned
2T Sauté mix
3 c Chicken stock
Lima Beans
Boiled Peanuts, cleaned
Butter

Render Bacon
Add onion, pepper, celery, corn, and sauté mix
Cook over medium heat for 5 minutes, add stock.
Bring to boil then add lima beans and peanuts.
Bring to boil, lower heat, and simmer for 20 minutes.
Add butter, season with salt and pepper.
