Crab Stuffed Lobster Tail

Crab Stuffing
1 lb lump back fin crabmeat
1 cup mayonnaise
1 cup Panko Bread Crumbs
1 large egg
½ tsp old bay seafood seasoning
Juice from half lemon
¼ cup fresh chopped parsley
1 tsp Worcestershire sauce
1/8 cup fine diced celery
1/8 cup fine diced yellow onion
1 Tbsp olive oil
5 oz Lobster tail

Heat olive oil in sauté pan and cook onion and celery until soft, let cool. In bowl combine mayonnaise and egg and mix until incorporated. Add old bay, lemon juice, Worcestershire sauce, parsley and mix. Add cooled onion and celery and mix to blend. Add Panko and mix to blend. Add crab meat and lightly mix to blend.

Place lobster tail on cutting board with hard shell up and tail facing away from you. With kitchen shears cut through the center of shell to the edge of where the tail begins. Spread shell apart with thumbs and gently pull lobster meat out of shell pulling meat over the shell. Top lobster meat with 2 tablespoons of lobster stuffing and lightly sprinkle top of crabmeat with old bay seasoning. Place Lobster tail on a greased cookie sheet pan and bake in preheated 350 degree oven for 20-25 minutes.

New York Steak Pizzaiola

6-8 ounce New York strip steak
1/8 cup capers drained
1/8 cup dice Clausen dill pickles
1/8 cup sliced kalamata olives
1/8 cup fine diced shallots
1 Tbsp minced garlic
2 cups prepared Marinara sauce
1 ½ Tbsp garlic butter
2 Tbsp Olive oil.

Heat olive oil over medium heat until hot. Add capers, pickles, and olives and sauté for 3-4 minutes. Add shallots and sauté additional 3 minutes. Add garlic and sauté 2-3 minutes. Add prepared marinara and cook 5 minutes. Add garlic butter and cook additional 2-3 minutes until melted and heated thru. Keep sauce warm.

Season steak with salt and pepper and rub with olive oil. Preheat grill and cook 3-4 minutes per side for medium/ medium rare. Place warm sauce on plate and top with grill New York Strip steak and garnish with fresh chopped parsley.
