Irish soda bread pudding


1 tablespoon of butter

4 cups leftover, soda bread,danish, raisin bread or donuts, cut into 1/2 inch cubes

3 cups of milk, (I use half and half)

1/2 cup dried cranberries

1/4 cup warm water (whiskey or amaretto works also)

3 eggs

1/2 cup sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg


Butter a 2 quart baking dish. Spread the baked product evenly in the dish. Heat the milk until its scalding. In another sauce pan heat the cranberries and water for about 5 minutes. In a bowl whisk the eggs, sugar, salt, cinnamon and nutmeg. Add the milk, "alittle at a time", without cooking the eggs. Spread the cranberries on top of the bread, pour the egg mixture over the top.Let the baking dish mixture rest for  30 minutes.


Preheat oven 350 degrees.


Place the baking dish inside a larger dish, pour hot water into the larger dish, making sure no water gets into the smaller dish. Bake for one hour. Remove from oven letting it rest 10 minutes. Serve hot or cold.
