Chef Harlan's Pumpkin Pancakes
Ingredients:
1 ¼cups All-purpose flour
2Tbsp Sugar
2tsp Baking Powder
1/2tsp Ginger
1/2tsp Nutmeg
1/2tsp Salt
1cup milk
6Tbsp Pumpkin Puree
2Tbsp Melted Butter
Cooking Instructions:
Whisk flour, sugar, baking powder, spices and salt in bowl
In a separate bowl, whisk together milk, pumpkin, melted butter, and egg
Fold all wet ingredients into dry ingredients
Use a greased non-stick skillet over medium heat
Pour in ¼ cup batter for each pancake
Cook pancakes for 2-3 minutes on each side
Serve with powdered sugar and cinnamon
Makes about six 6-inch pancakes
