Chilled Watermelon Soup
Ingredient:
1 Seedless Watermelon
½ cup Simple Syrup
1t Chop Fresh Mint
½ c Seedless Cucumber (Small Dice)
3oz Goat Cheese (Soften)
1oz Heavy Cream
1T EVO
1 Blender
Take Rind of Watermelon off and slice. Add simple syrup to the slice Watermelon in a zip lock bag, press air out and seal the bag for 30min. After 30min put Watermelon in a blender and blend for 45sec and then Strain.
Take small dice Cucumber and add Mint and toss together.
Whip Heavy Cream and Goat Cheese together into a mousse texture.
Add Olive Oil for garnish.
