Mimi's Recipe GMJ

Serves 4

Ingredients

16 oz Cooked Turkey, Diced into ½ inch cubes

¾ cup Pistachios, Chopped

¾ cup Dried Cranberries

2 Tbsp Green Onions, Chopped

¼ tsp Salt

¼ tsp Black Pepper

1 cups Mayonnaise

1 Tbsp Dijon Mustard

4 Croissants, cut in half or 8 slices of Bread, Toasted

2 Tbsp Mayonnaise

8 slices of Tomato

4 leaves of Green Leaf Lettuce

 

Instructions

In a medium size bowl, whisk together the mayonnaise, salt, pepper and the Dijon Mustard. Fold in other ingredients until well coated.

To assemble for sandwich: Toast bread or croissant, and spread with mayonnaise. Layer lettuce, tomato and a scoop of turkey pistachio salad on top. Place other slice of bread or croissant half on top and enjoy!!!
