Serves 4
Ingredients
8 cups Baby Greens
½ cup Walnuts
½ cup Blue Cheese Crumbles
½ cup Diced Tomatoes
½ cup Bacon (cooked and chopped)
½ cup Dried Cranberries
Balsamic Vinaigrette:
3 Tbsp Balsamic Vinegar
1 Tbsp Dijon Mustard
1 Clove Garlic (minced)
½ cup Olive Oil
Kosher Salt & Freshly Ground Black Pepper to taste
½ cup Strawberries (sliced)
4 Tbsp Blue Cheese Crumbles
Instructions
Balsamic Vinaigrette:
In a small mixing bowl whisk together garlic, Dijon mustard, salt and pepper and vinegar. Slowly drizzle in olive oil while whisking to make vinaigrette.
Salad:
In a salad bowl combine baby greens, walnuts, blue cheese crumbles, tomatoes, bacon and dried cranberries. Drizzle balsamic vinaigrette over ingredients and toss gently so as not to crush greens.
Place salad mixture in four bowls and top with sliced strawberries and blue cheese crumbles.
