Pumpkin with Chili and Lime
1 pound of pumpkin or squash, seeds removed, cut into thin wedges and peel.
2 tablespoons corn or sunflower oil
2 tablespoons butter
1/2 teaspoon of butter
rind of 1 lime, grated
2 tablespoons lime juice
Heat the oil and butter in a sauce pan, stir in the chilli sauce, rind and lime juice. Toss the pumpkin in alarge bowl with the sauce mixture to coat. Divide the mixture into 4 double thickness foil and enclose the pumpkin. Cook 20-30 minutes. Serve at once.
