JACKSONVILLE, Fla. -- Restaurants with 35 violations, chef's reportedly not washing their hands, dead roaches on the floor at a walk-in cooler. These are all things that were found when restaurant inspectors visited local restaurants.

When inspectors visited O'Charley's in Fleming Island, they noted 17 violations, six of them being of high priority.

We went to speak with a manager and were told the report that said an employee handled raw chicken and then utensils and raw beef and then utensils was wrong.

The report also says the issue was corrected on site. Two small roaches were also found near the walk-in cooler.

Some things were repeat violations, like food not held at a safe temperature. Cheese was recorded at 64 degrees when it's supposed to be at 41 and raw shrimp stored over ready to eat deli meat. Those also were corrected on site.

Country Cabin in Orange Park had 21 violations when inspectors visited on Oct. 30. Just two days later, 12 of them still had not been corrected.

The inspection report says on Oct. 30, a chef washed his or her hands for 5 seconds and didn't dry them. Then on the 1st, an employee only washed his or her hands for four seconds, without soap.
At the time of this report, the restaurant is still pending a follow-up inspection.

And out at the beach, Casa Marina Hotel and Restaurant had 35 violations, nine of which were of high priority on the Oct. 30. More than a week later, 11 of them remain, most of them with no change.

Foods were not protected on a buffet line. That was corrected.

There were a few reports with flies in the bar area and more in the main kitchen. A report from Nov. 9 shows management started to deep clean the kitchen and bar. It also says pest control has been to the establishment. They were there when we went to the restaurant.

O'Charley's recently had an inspection and met all requirements. Both Country Cabin and Casa Marina will have followup inspections.

On any given day, the establishment might have fewer or more violations than noted in the most recent inspection.
